Whitby Seafish speciality set to land on menu at top London restaurant
The fish merchant, based in Staithes for the past 20 years, said its oak roasted salmon will be on the menu at the Hix restaurant, champagne and caviar bar in Selfridges. The restaurant, owned by Mark Hix, became aware of the speciality salmon thanks to former local man James Coward, a friend of one of the restaurant’s chefs.
During a trip back up North to see his friends and family, Mr Coward brought along his chef friend who was impressed with the oak roasted salmon served up in a buffet prepared by his mother Sally, who lives in East Barnby. A supply of the oak roasted salmon was taken back to the capital. Despite the restaurant having its own smokehouse, they called for more of Staithes’ smoked fare and the team of chefs is currently working out how to fit it into its menu.

Hide AdVicky Dixon, who runs the Staithes business with Matthew Asquith, said: “It is great news. The chef said he thought it tasted fantastic and has even ordered some for himself. We’re waiting to see what they will do with it – whatever they do, I’m sure it will taste great. We really are delighted to have some of our produce available in such a renowned restaurant.”
